Use any of the 'dry' Italian cheeses, like Parmesan, Romano, or Asaigo. Or you could grate some Swiss cheese onto your onion soup ... that's also really delicious. Use the DRIEST cheese you can find, though, so it can 'absorb' some of the broth and won't 'lump up' and get half melted and nasty in your bowl.

provalone or motzorella (cant spell! haha) pour the soup into a bowl and put the cheese on top, then throw in the oven for a few mins to melt the cheese. MMM!!! i think i just figured out dinner (o:

Any white cheese would be good. The most popular choices are Swiss, Parmesan, Gruyere or Provolone. If you want to make it extra good, use two different cheese.

I would say probably a sharp cheddar not too sharp but any brand you like but it will make it a good consistancy and give it a good flavor :)
