“So he (Potiphar) left in Joseph's care everything he had; with Joseph in charge, he did not concern himself with anything EXCEPT THE FOOD HE ATE.”

Why did it concern Potiphar THE FOOD HE (Joseph?) ATE?

its most likely talking about Potiphar's food, not Josephs. Its saying he left all of his possessions with Joseph, the only thing he worried about was his food. The food he would probably need, or would be needing. Depends on how the rest of the passage goes.

That Potiphar favored Joseph so much that he gave his belongings to Joseph and set Joseph over his household in essence.

All Potiphar thought about is the food that he ate daily just like you and me eat food everyday, well, Potiphar was only concerned about his belly because he trusted Joseph with everything else.

Jehovah God blessed this Egyptian Court Official's (Potiphar's) Household on account of Joseph. Jehovah God was with Joseph and blessed him, and what was in Joseph's environment, so in this case Potiphar was blessed because of Joseph.

Potiphar was the Egyptian official who bought Joseph as a slave.
Joseph. Sold as a slave by his brothers became the Pharaoh's Chief minister.

Joseph was left ever thing by Potiphar and he, POTIPHAR concerned himself only with the food that he,POTIPHAR ate.

This is saying that Potiphar gave to Joseph EVERY responsibility he had. This left Potiphar nothing to do other than figure out what he himself would eat and drink.

i should preface this by saying i'm an atheist and i am not any kind of bible expert...

but, from the language posted here, i think potiphar is concerning himself only with the food that he himself (not joseph) is eating. that's why he left everything else in joseph's care - so he wouldn't have to think about anything but sustaining himself.

that's just how i interpret this particular language.

This is more concerned with what Potiphar was eating, not Joseph. It boiles down to a cultural difference.

It is speaking of Potiphar, not Joseph. He(Potiphar) was sure that everything would prosper: therefore he ate and drank and did not worry.

He refers to Potiphar, not Joseph. Sounds like Potiphar was particular about what was for dinner.

Potihar saw that the favor of the Lord was upon Joseph so he made him incharge of everything he had. He was not concern with the food Joseph ate. Photiphar did not know the abounance or blessings he had except for the food he (photihar) eat. Because favour of the lord was with joseph everything he put his hand to it prospered.

You missed it. Potiphar only knew what was set before him to eat. It is talking about the master's food, not Jospeh's.
