I have 500g of mince, what can I make instead of the usual, cottage pie, spag bol, chili and lasagne

Mince & tatties - Scottish style. Sweat off some onions, bung in the mince and brown. Add a dissolved beef stock cube (or fresh if you have) - about a pint & about a tablespoon of worcester sauce, some sliced carrots. Cook for half an hour or longer if you can. Boil any kind of potatoes and put them in the mince, season and serve all together. In Scotland would be served with meally puddings which are made with oatmeal, but can't find them in the south of England too easily.

Antony's 'mainstay' mince

Preparation time 30 mins to 1 hour

Cooking time over 2 hours






Ingredients
225g/8oz streaky bacon, diced
175-200ml/6-7fl oz good olive oil
2 onions, finely diced
2 sticks celery, peeled and finely diced
2 carrots, peeled and finely sliced
5 cloves garlic, peeled and crushed with a little salt
2 tsp fresh soft thyme leaves
2 bay leaves
2 tsp dried oregano
2 x 400g/14oz cans chopped tomatoes
2 tbsp tomato purée
1 tbsp anchovy essence
2 tbsp Worcestershire sauce
1.8kg/4lb minced beef
250g/9oz fresh chicken livers, finely chopped
2 bottles dry red wine
1.7 litres/3 pints chicken, beef or lamb stock
salt and freshly ground black pepper



Method
1. In a large heavy-based saucepan, fry the bacon in two tablespoons of olive oil. When the bacon is crisp and has released some natural fats, add the onions, celery, carrots, garlic, thyme, bay leaves and oregano and cook over a medium heat until the vegetables have softened and taken on a little colour. Add the tinned tomatoes, tomato purée, anchovy essence and Worcestershire sauce. Stir to combine.
2. Meanwhile, in a large frying pan, heat a little olive oil and fry off the mince in small batches until browned. While the meat is frying, break up any lumps with the back of a wooden spoon. Remove the cooked meat from the pan and repeat, using more oil each time if necessary, until all the meat is used up. After each batch, add the meat to the sauce mix.
3. In the same frying pan, fry the chicken livers until brown and crusty (in a little more olive oil) and add the livers to the meat. Deglaze the frying pan with some of the red wine, scraping any crusty bits from the bottom, then pour this wine, the remaining wine and the stock into the meat pot.
4. Bring to the boil, reduce the heat and simmer, stirring from time to time, for about two hours. Season to taste. If the liquid reduces too much, top up with water. When the meat is tender, allow to cool, then refrigerate. When cold, lift off the solidified fat and discard. Freeze the mixture in small batches and use for stuffed tomatoes, bolognese, cannelloni, shepherd's pie, moussaka or lasagne.

Teryaki burgers - if it's good quality lean mince, just form it into patties, fry 10 mins or so, then add a teryaki sauce such as 'Blue Dragon', and simmer for 5 minutes - just a bit different and very tasty.

go for simple but nice,boil the mince and empty out the grease floating,then add onions,let it cook gently for 3/4 of an hour,and add gravy powder,stir till nice and thick,you can have it with boiled or roast,or mashed potato,peas,carrots,or just have it with chips,and if theres any mince leftover add curry powder for a little of the exotic,mmmmmmmmmmmmm

My girl fry mince with bamboo sprout and cook mince with mustard. It's very delicious!

tacos would be a nice change and im sure el paso does a taco kit in supermarkets, they look interesting
