A rare length for mtb stems seem to be 60mm to 70mm in length. I've taken a look online but there seems to be stems 50mm and shorter only.
The bar size I would like to run is 31.8mm diameter.
What is available out there?

They're all over the place. I have a 60mm from Syncros as well as a 70mm from Thomson. Just look harder, and if you can't find them stocked, have a shop order one for you. Even if it isn't advertised or stocked, most manufacturers have them available. Ask to see a shop's distributor catalogs (or whichever one they prefer to use for stems).

www.bti-usa.com is a popular distributor and you can browse their stock online (but you have to order through a shop). QBP is another, but as of yet you can't browse their website for products.

I took my old one to a local machine shop and had them custom make one for me. The guy did it for $20.
