He loves my Mexican Rice! I'll try to share it, I don't measure the spices. (This goes great with any meat and also great for brunch with any meat and breakfast gravy!) One cup raw rice, use brown or Jasmine for BEST results, white will do. Use a heavy (like cast iron) skillet and heat add about a tablespoon of veggie oil and let get hot. Add the rice and stir gentley. Cook stirring until rice is puffed and light brown (goldish). (OOPS!) before you do that, prepare every thing else! One medium onion coarsly chopped, about 1/2 cup chopped green pepper (you can use frozen) about 1/4 cup chopped celery (you can use frozen) set aside. Fresh garlic is best, I put about 3 cloves garlic, peeled, into the blender. Add 2 chicken bouillon cubes, one hot chili dried or fresh, and the liquid off a can of diced tomatoes. Blend until liquified. You will use the tomotoes from the can. Spices are an approximation: 1 tsp ground cumin, 1/4 tsp ground oregano or 1 tsp dried, 1 tsp sweet basil, (If you don't have fresh garlic you can use a teaspoon of powder or 1/2 tsp of the jarred minced garlic) and 1 tsp paprika (for color, so if you don't have it, don't worry about it.) OK. Fry the rice and immediately add the onion, celery, and green pepper. Let fry about a minute or 2, still on high heat. Add the tomato then the blender stuff, then the spices. Stir. Add 2 cups cold water and stir gently. Let come to a boil. Cover and simmer on medium low heat for 20 minutes for Jasmine or white rice. For BROWN rice, cook for 50 minutes. Uncover and stir, rice should be slightly split at the ends. Turn off heat and serve as a side dish or with tacos. (Just before covering, you can add ground cooked meat or cubed meat that has been cooked and make a full meal out of it. Add peas or corn if you desire.) This is a versital dish and has great flavor! The fresher the ingredients, the better it tastes!

Baked Smothered Steak
Cut tendorized round steak into portion sizes of your choice, dip them into a milk/egg mixture and dip into flour that has been seasoned with salt/pepper/and garlic powder.
Then you pan fry in a pan with oil just until it is browned on both sides like chicken fried steak but you dont cook all the way.
Then you place in a 9x13 pan and cover with 2 cans of Campbells Golden Mushroom Soup and bake @ 350 degrees for 1 hour.
This is my husbands favorite meal.
It goes great with a baked potato and a mixed green salad.

Fried Chicken
Heat about 3/4 C shortening on med-hi heat
Meanwhile cut chicken into pieces & coat with flour. Add to hot shortening. When all chicken is added to pan sprinkle with salt, pepper, garlic powder & Italian Seasoning.
Continue cooking on med-hi heat till you get a nice brown on the down side of chicken. When you get a nice brown bottom side turn it over and reduce heat to med. Cover but leave the lid kind of ****** so steam can escape. When you get a nice brown on the second side, reduce heat to med-low & cook chicken, turning every 7 minutes or so for about 30 more minutes for the smaller pieces, 40 minutes more for the larger pieces or till the juices run clear.
Serve this with chicken gravy made from the left over grease from the chicken and mashed potatoes. A side salad or veggie & egg rolls with butter.
He will love you for ever!

Pot roast or Prime Rib...
slowcook the pot roast with carrots and potato's onions,celery,and maybe green chile (sans) seed. Hot and flavorfull.
Prime Rib baked not stove top add an Onion and some Jack Daniels to cooking procees to tenderize it! Au Jus sauce make it adding flour and beef broth to cookin leftover flavors...sauce in bottom of pan good flavors~!

A pasta is always a good choice. Chicken Fettuchni Alfredo, with parsley for a look , garlic toast.
or really surprise him with a nice steak bbq with potatoes, veggies, garlic toast, the whole 9 yards

As plain as it sounds, my husband LOVES home-made spaghetti sauce and home-made meatballs.
He is also very impressed with my kahlua brownies, even though all I do is add extra vanilla and a 1/4 cup of kahlua liqueur to the batter and 60% cacao chocolate chips. (boxed mix as the base of this)
