The sub has an inertial navigation system to tell them where they are when out of contact with the GPS system. There is also under-ice sonar to keep the sub away from the ice until they decide to leave the ice cap or go through it.

Slow and cautious is also the way to do it.

I'm no expert, but I know that It's warmer near the bottom of the water which is how fish are able to survive. Subs have tracking devices that can indicate the temperature of their surroundings. They should plan ahead so they know when they will be in a place warm enough to surface or have a plane for penetrating the ice, at least tract their original point of entry so that they can go back if necessary.
