I'm way too stressed in my honors and AP classes and would like to drop into regular levels because I'm barely passing them. Which looks better on the college resume?

An 'A' in a regular class looks better than a 'C' in honors.

John,
Honors classes do look better on your transcript, but not with Cs and Ds. If you aren't ready for the AP and honors classes, move back to the others and ace them. A 4.0 transcript from regular classes looks great, too. People from all kinds of backgrounds and levels of performance get into college. And not all the best transcripts get people into college, either.

It's better to see a B on an AP/HP class than an A on a regular class. They kept telling me that when I was in HS.

Take classes that are AP/HP that will pertain to the subjects of the major you want. For example, if you want to be an engineer of some sort, make sure to take AP Physics.
