I usually pick up a fresh one the day before. I have the worst luck defrosting those things LOL! :-D

Fresh fresh fresh. I do not like those frozen, pre-basted, hormonally enhanced turkeys. I prefer to get a natual fresh turkey and brine it overnight.

Turkey Brine
"This is a tasty brine for any poultry. It will make your bird very juicy, and gravy to die for!! This is enough brine for a 10 to 18 pound turkey."
1 gallon vegetable broth
1 cup sea salt
1 Tbs crushed dried rosemary
1 Tbs dried sage
1 Tbs dried thyme
1 Tbs dried savory
1 gallon ice water

1 In a large stock pot, combine the vegetable broth, sea salt, rosemary, sage, thyme, and savory. Bring to a boil, stirring frequently to be sure salt is dissolved. Remove from heat, and let cool to room temperature.
2 When the broth mixture is cool, pour it into a clean 5 gallon bucket. Stir in the ice water.
3 Wash and Dry your turkey. Make sure you have removed the innards. Place the turkey, breast down, into the brine. Make sure that the cavity gets filled. Place the bucket in a cool location overnight. Refrigeration is not necessary. Remove the turkey carefully draining off the excess brine and pat dry. Discard excess brine.
4 Cook the turkey as desired reserving the drippings for gravy. Keep in mind that brined turkeys cook 20 to 30 minutes faster so watch the temperature gauge.
Yield: 2 gallons.

I get a frozen one out of the freezer and leave it in the cooler at work for about a week and by then it is finally thawed and I take it home and cook it up.

when we lived in the city it was easier to get a fresh one at the market, now that we live out in the sticks the grocer usually only has the frozen kind, oh well!

I've had no problem thawing them out. But I may get a turkey roll and get a jar of giblet gravy since I'm going to be by myself, as usual.

Frozen..nothing to thawing..I do it all the time. About 4 days prior put it in the frig..it will thaw out..Either put it in cold water it will thaw.. I prefer the frig.
