Breakfast Casserole
For a delightful variation, 2 cups cubed cooked ham may be substituted for sausage.
1 lb ground pork sausage
10 white bread sandwich slices, cubed
2 cups shredded sharp Cheddar cheese
6 eggs
2 cups milk
1 tsp salt
1 tsp dry mustard
1/4 tsp Worcestershire sauce
1 COOK sausage in a skillet over medium heat, stirring until it crumbles and is no longer pink; drain well.
2 PLACE bread cubes in a lightly greased 13 x 9-inch baking dish; sprinkle bread evenly with cheese, and top with sausage.
3 WHISK together eggs and remaining ingredients; pour evenly over sausage mixture. Cover and chill casserole for 8 hours. Let stand at room temperature 30 minutes.
4 BAKE at 350 degrees for 45 minutes or until set. Let stand 5 minutes before serving.
Servings: 8
Apple Raisin French Toast Strata
A simple but elegant way to make breakfast fast. Put together the night before, and bake while you're in the shower. Serve with lots of extra maple syrup! You may also add extra raisins if you wish.
1 (1 pound) loaf cinnamon raisin bread, cubed
1 (8 ounce) package cream cheese, diced
1 cup diced peeled apples
8 eggs
2 1/2 cups half-and-half cream
6 Tbs butter, melted
1/4 cup maple syrup
1 Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
2 In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
3 Preheat oven to 325 degrees F (165 degrees C).
4 Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.

I know a large family in a small town who, when the children grew up and had family (and in-laws) of their own, they respected the fact that everyone had another side of the familiy to spend Thanksgiving dinner with. So... they began the tradition of Thanksgiving breakfast, a big meal about 7 or 8 in the morning, with more food than most Thanksgiving dinners. It sounds ridiculous, but as it became an event for inviting friends and such, people looked forward to it and would actually be there early (not as early as the poor folks making the fresh homemade biscuits on the wood-burning pot-belly stove). Last time I went there were nearly 60 people at this breakfast, which like I said, was in a small town, so that's about 1/10 the population of the town right there.

We still celebrate the holidays with my parents, so it's all done at their house. They usually put out danishes and breads (like banana or zucchini bread) that we can enjoy with our coffee and pick on through the morning & early afternoon.
This year, we'll be having a brunch on the day after Thanksgiving (my sister can only stay through Friday afternoon). My Sister-in-Law is from the South, so she's going to bring grits. I'll be making what we call "cheesy eggs"...it's one of those dishes that you prep the night before, and only have to bake in the morning. All together, it has 5 cups of various cheeses, with a total of 9 eggs (I think we should call it eggy-cheese!).

I am planning on making a delicious breakfast for me and my boyfriend Thanksgiving morning. I'm going to make french toast or eggs (I make them with tomatoes, green/red peppers), bacon, seasoned hash browns and buttered cinnamon toast. Yummy!

My mom usually makes an extra pumpkin pie for us at home (the other to take with for dinner at grandma's) so we just eat that.
For X-Mas, I make a breakfast casserole. It's delicious!

we usually just skip it altogether since my mom serves dinner around 2. She normally lays out a cheese/meat tray for snacking.
