I hired them 2 weeks ago, and gave them the keys yesterday. Now what?

So it starts the day you give them the keys then. Not when you sign the contract.
I just want to know how long to wait before it starts to look like they're not holding their end of the bargain.

You just gave them the keys yesterday. What did you expect to happen in one day-a miracle? Wait a few days before you start complaining.

It would appear that you would need to give them a little more time. What exactly are they supposed to have done already, with the keys for only one day?
