That should be a memorable one..
If you need an original gift try http://www.photoartomation.com
They convert ordinary photo into Art.
I sent them a picture and they turned it into beautiful piece of art.
This was an anniversary present for my girlfriend. She loved it so much.
I will definitely recommend photoartomation.com to family & friends.

If she wants kitchen stuff then I guess get her that but additionally you should do something thoughtful (thoughtful does not mean expensive) that is about her as well. Maybe plan a special day together doing all her favorite things. Something to show you love her. Then you can get her a mixer too as a 'necessity' gift

well you say she is not materialistic, so she may really appriciate a practicle gift. if your not sure what kitchen items she wants get her a gift card to a store where she would be likely to shop for that kind of stuff... & get her a little side gift so it is a tad more personal, a scarf or a sweater or something, tell her when you saw it you had to get it cause you knew it would look perfect on her....
wish my husband was as thoughtful as you on picking gifts! ...i got a blowdryer last christmas, a $15 one from walmart

Honestly, I would LOVE to get a nice mixer for Christmas!
Maybe it would be fun to get her a gift certificate to Williams-Sonoma...then arrange for a trip to one of the cities where they have a nice store (maybe Napa?), and take her on a shopping expedition.
Another fun idea could be a cooking class that you take together.
For the record, keep spoiling her!

Well, get her a mixer, and then add a small scrapbook of meaningful pictures, or write her a nice long christmas letter of what she means to you!
My dad gave me a letter last christmas, and it was so sweet I almost cried... and I don't cry often. = ) I would also love for my boyfriend to give me one too, it shows that you didn't mind putting a little time and thought into it! Plus, you get points for being sensitive and sweet.

Don't get her anything so practical. I recommend a personalized teddy bear. They are cute and cuddly and unlike flowers, last for many years to reminder her of how you feel. You can get it embroidered with "I love you" or anything you like. The personalization makes it extra special. Here is a great place to get personalized teddys.
