I make my noodle ahead of time and freeze them. That way it frees up sometime on Thanksgiving and Christmas etc, to work on other things that can't be made ahead. I add 1 beaten egg and 2 Tablespoons of milk in a cup of flour. Mix until it sticks together into a ball. I smear flour over an area on my work bar and dump the dough on that and knead a few times I roll the dough out as thin as I want and let set for an hour or less. I dip my pizza cutter into some flour and cut my noodles to the size I want. I place a piece of waxed paper and sprinkle with a little flour and lay the noodles in rows on top the paper. Then I cover with another piece of waxed paper and flour and make another layer and so forth and so on. You will get the ideal. I also triple the recipe each time. Maybe Quadrouple it sometimes. Make as many as you need.Then I put them in the freezer until needed.It sounds like a lot of trouble but it's not. It's quite easy. And the noodles will melt in your mouth. !!! Once you boil them in hot broth etc. for 30 minutes !!!! This has no salt and tastes wonderful without it !!!

Yes, you can freeze them and they will keep well, that is, if you can keep other people from eating them.
Once they've been made, just air dry them, and freeze. They should have a fair amount of flour on the outside of them and it will make them easier to separate when you thaw them.
You've got a lucky family that gets homemade noodles. There are so many people that will go to the store and get a bag. Bless you for your thoughtfulness!

i have also found that if you do freeze them, they keep best in a freezer that is not self defrosting. the self defrost cycle can cause them to partially thaw - then they sometimes stick together. if a non self defrosting freezer is not available, then i wouldn't store them too long and be sure and give them a couple of whacks on the counter to make sure that they "unstick"

I use to cater....you can dry them. I've dried them on screens, lines strung around my kitchens and on towels. You can keep them a veryyy long time if you do. I've had some over 6 mths. Not sure on freezing.
