My mom makes pumpkin bars...they are a thick, cake with a really yummy cream cheese frosting and walnuts on top...everyone loves those. I can get you the recipe if you'd like to email me...it's written down, and I don't ,mind typing it out if your interested. Also, I think some really classy deserts are made with pears around this season...they are on sale big time at the markets right now. My favorite Barefoot Contessa often makes baked pears with fresh cream or a crumble which is great. It's fruit of your choice on the bottom of a pie plate and then tops with oats, sugars, nuts, etc. and baked. You could also do a desert fondue or something unique like that. Bake or buy an angel food cake and make a chocolate or pumpkin butter fondue. Cut cake into one inch cubes and arrange on a platter with a bowl of the hot dip in the center and toothpicks...or a fondue set if you have one obviously. I have also made a cake in my crockpot...sounds crazy I know...but seriously it was delicious. It was called a chocolate, gooey fudge cake. I served it with vanilla ice cream and wow! This one is a family favorite...We call it "Pumpkin Cake", but it's essentially an upside-down pumpkin pie. It has a very traditional flavor, but has no dough to roll (or ruin, as the case may be for some of us!).
Prepare pumpkin custard for two pies, per the instructions on the back of the can of pumpkin (be sure to get just pumpkin, not the pre-prepared pie filling).
Pour the custard mixture into a greased 9 x 12 baking dish.
In a separate bowl, combine one package of yellow cake mix (a spice cake mix could also be yummy). Using a pastry cutter, add in one stick of butter until the mixture is crumbly. Mix in one cup of nuts (pecans or walnuts are good choices).
Sprinkle this mixture on the top of the custard. Bake for about an hour (at the temp recommended on the pumpkin can).
It's best served with some home-made whipped cream, but is super yummy all by itself. It also saves well, so it's great as part of the leftovers.

Foolproof Chocolate Fudge. prep time:10 min. makes approx. 2 pounds. 3 cups ( 18 ounces) Hershey's semi-sweet chocolate chips or Hershey's special dark chocolate chips. 1 (14 ounce) can Eagle Brand sweetened condensed milk (NOT evaporated milk) dash salt. 1/2 to 1 cup chopped nuts. 1 1/2 teaspoons vanilla extract. In a heavy saucepan, over low heat, melt chocolate chips with EAGLE BRAND and salt. Remove from heat; stir in nuts and vanilla. Spread evenly into wax paper lined 8 or 9 inch square pan. Chill 2 hours or until firm. Turn fudge onto cutting board, peel off paper and cut into squares. Store leftovers in refrigerator.

fruit salad is a good dessert, or i was watching rachel ray yesterday and paula deen was on there and she made a pumpkin goey butter cake and pumpkin pecan pie-made with a frozen pie crust! they looked delicious and easy to make, the recipes are on the food network website!

Apple Dumplings - the kind where you have a whole apple stuffed with spices etc and then wrapped in phyllo dough or a ready made pie crust....YUM - lots of recipes on-line - this is what I am making this year

I agree with the people who said sweet potato pie. I've NEVER liked pumpkin pie. Too many spices and I HATE nutmeg. Go with the sweet potato pie and serve a normal drink. No one wants their desert and their drink clashing in their mouth.

I would think something pumpkin would still be Thanksgiving enough, try a pumpkin cheesecake. (though I would definately find and test the recipe before the big day...) :)
