I am interested in going on an adventurous + educational trip...?

Where would be a good destination? I will be leaving from Toronto. I want something fun and adventurous like; kayaking, scuba diving, surfing, rock climbing, hiking, etc.. But I also want to learn about the culture I will be surrounded by. Any suggestions?
