It didn't "end" per se. Perhaps it isn't written as much now because the historical conditions that gave birth to it have changed.

20th-Century music, also known as atonal or experimental music, came about because composers sought to break away from the Western sound (Viennese, Classical, Romantic), some for the desire to discover aesthetic freshness and break away from the long tradition of Western music, while others for political reasons. (For example, at that point in history, what we now generally refer to as "classical music" was largely associated with Germany and Austria, and during the World War II period, some composers of Jewish descent embraced atonality as a kind of political statement against the Western musical tradition, a la Germany, a la Hitler.)

Whatever composers' motives, ultimately tonal music (that is, music that was in a key or sounded like it "made sense") won out, hence what you may perceive as the "ending" of 20th Century music.

20th century music is alive and well. The music I grew up listening to in the 60's and 70's is still on the radio and T.V. every day. The music the Establishment called degrading and disgusting back then is now used by the Establishment to sell their commercial products.I hear Beatles and Stones music, and many other 70's groups, every single day on T.V. commercials.
The bad music made from the 80's and 90's will never be heard again. Thankfully disco died and rap ( music ?) will die within the next 10 to 20 years.
I turn the radio on now and I can listen to same songs I listened to in the 70's. I almost forgot, Elvis' music, the king of rock and roll will never die.

Why hasn't 21st century music begun? I don't see any progress, just rehashing and pastiching what's already been done.

All things come to an end sometimes. Except high gas and oil prices. =[
