Where to find information on basic unix info from mail server ???

Consider how it all started (I was online back then).
First you had everyone logging onto the same mainframe. They started leaving text files for each other. Then mainframes started talking to each other and came up with a protocol for transferring files back and forth. Then a protocol was created for putting standard headers at the beginning of email to tell the server where to send each email. So basically email is just editing a text file and FTPing it to another user, with some fancy options added later.

To understand things further you need to see the headers in each email. Most programs dont show them by default since it would only confuse users. In your email program look for an option to view all headers or turn all headers on.

The logs of the mail server are usually in
/var/logs
but it depends on what flavor of unix you are looking at.
