I am doing a report on this on Thursday and I can't for the life of me find a concise report of the different types of ships during this period. I know of the different types ships, but not what specific ones were used at that time. Help would be absolutely fantastic.

I know it's Wiki, but it's exactly what you need for your report.
I suggest looking at "barques", "brigs", "brigantines" and "sloops" for the American colonial period which I interpret as primarily the 1700s after the age of cogs, caravels and carracks - Columbus type ships from the 1500s.

They used wood hulled craft that were rigged in at least three way. http://en.wikipedia.org/wiki/Sail-plan

One: The Sloop; A one masted boat with fore and aft rig some even had a square top sail. http://en.wikipedia.org/wiki/Sloop

Two: The Brig ; a two masted boat with one mast rigged as a square rig sails and the second mast with a fore and aft sail . See http://en.wikipedia.org/wiki/Brigs

In general these were large wooden sailing ships. Try looking up the Pinta, or the Santa Maria - Columbus's ships!
