YES!!! There's this book, I love it SO MUCH (i'm probably like your cousin) it's called How to Cook Everything. It's huge and it has a write-up about a lot of things. It has so much information that makes sense, and he tells what happens if you put too much of this or too little of that, how to know if it's overcooked, underdone, etc. She will love it.

I got it when it was almost $50 but it's been on the market for a while and is now down to $15---it's also paperback now. Enjoy!

I know how people are all about hating Rachael Ray, but her 365 cookbook is really fantastic. Everything I've made out of it is just great. I also recommend Fix It and Forget About It for a slow-cooker cookbook and Cheap. Fast. Good! for the frugally minded cook.

A really great cookbook is The New Best Recipe by the editors of Cook's Illustrated. If your cousin doesn't have it, this one is a must. It has descriptions, some pictures, explanations of why a certain way is the best way to make various dishes and tells all the different ways they tested before coming up with the absolute best dish. You can get it at Amazon http://www.amazon.com/New-Best-Recipe-All-New-Recipes/dp/0936184744/ref=pd_bbs_sr_1/103-6152099-1295026?ie=UTF8&s=books&qid=1195019315&sr=1-1 for $23.10 in hardcover.

Cook's Illustrated also put out some other good cookbooks like The Best 30-minute Recipe: A Best Recipe Classic ($23.10 at Amazon) http://www.amazon.com/Best-30-minute-Recipe-Classic/dp/0936184981/ref=pd_sim_b_title_1/103-6152099-1295026 as well as The Best Light Recipe http://www.amazon.com/Best-Light-Recipe/dp/0936184973/ref=pd_sim_b_title_1/103-6152099-1295026 and Cover and Bake http://www.amazon.com/Cover-Bake-Best-Recipe-Classics/dp/0936184809/ref=pd_sim_b_title_3/103-6152099-1295026 and The Best Make-Ahead Recipe http://www.amazon.com/Best-Make-Ahead-Recipe/dp/1933615141/ref=pd_sim_b_title_1/103-6152099-1295026 and http://www.amazon.com/Italian-Classics-Editors-Illustrated-Magazine/dp/0936184582/ref=pd_sim_b_title_4/103-6152099-1295026 Italian Classics.

There is also Joy of Cooking: 75th Anniversary Edition by Irma S. Rombauer, Marion Rombauer Becker, Ethan Becker http://www.amazon.com/Joy-Cooking-75th-Anniversary-2006/dp/0743246268/ref=pd_bbs_sr_1/103-6152099-1295026?ie=UTF8&s=books&qid=1195019748&sr=1-1 - a real classic. This version was updated in October of 2006.

Reiman Publications (which publishes magazines like Country Woman) has a lot of cookbooks that are really good. You can check out their site at http://www.countrystorecatalog.com/default.asp?REFURL=I200
(a couple of their cookbooks are Light and Tasty and Quick Cooking).

Fannie Farmer is a great cookbook. Start with very simple things (This is how you boil water for pasta), also includes recipes from James Beard's cooking school (that's very good). Several friends have bought their own after seeing all that mine includes.

The Italian cookbooks by Lynne Rosetto Kaspar are very good, especially the Italian Country Table. Beautiful photographs, and makes gourmet simple.
