If someone calls an hispanic white they usually say "man i aint white..wtf im hispanic!"... um whats wrong with being white..?

Nothing. But, they are not white that's why they don't want to be called white. WTF?

I know where you're coming from. I had a co-worker who claimed he was Hispanic yet he is lighter than me and had a last name which seemed to be of European descent. One time I called him white in some reference and he got very upset and acted as though it was clear as day that he wasn't white. Weird.

Nothing. Wouldn't you be offended if someone call you hispanic or black? It's simply not who you are so naturally you'd be annoyed by it.
