Is there any difference, aside from that the HDMI is one cable and the HD AV is 5 (really 6). Is there any difference in quality or anything else like that for the Xbox 360?

There really isn't any difference..

The Xbox 360 will output all resolutions over component cables (including 1080p).. You won't notice any difference between HDMI and component at the same video resolution..

The only exception is if your television supports 1080p.. some 1080p televisions will not accept 1080p over component in which case your only option will be to use HDMI if you want 1080p..

To make sure your Xbox is outputting the best quality signal check the display properties.. on the Xbox go to the System > Console Settings > Display > HDTV Settings..
Select the highest video resolution supported by your television (the lower down the list the better)..

it says on the Microsoft website that the HD-av cables support 720p and up to 1080p so there will be no difference compared to HDMI on your TV

Well I'm gonna guess that you only have a 720p TV so then Component is better cuz its cheaper, and HDMI will look the same. If you got 1080p then HDMI, but the difference is small.

Component HDAV cables are considered to be "analog"
High Definition Multimedia Interface (HDMI) is considered "digital"
both cables can output a 1080p signal only of your TV can accept 1080p
they both can also output 720p.
so in the end it is analog vs. digital

HDMI is better, because it display 1080p plus is more easier to connect since is only 1 cable.

hdmi can send uncompressed hd sound which component can't but you need atleast 7.1 surround sound for that, the 360 can only go up to 5.1, so basically hdmi or component, no matter what, it'll still be the same, so whatever you like better, you can either use any. my ps3 has 7.1 surround sound so i use hdmi 'cuz i got 7.1 surround sound speakers around my room.
