Hi. My two favorites are Iota Cancri and Alberio. Both have vastly different colors between the two stars which make up each.

When she's in season, late spring to early autumn for me, the first star I look at every night is Eta Carinae.
This is one star that is very unstable and is on the verge of exploding into a Supernova!!!.
It underwent an extraordinary brightening in the mid 1800's when it rivalled Sirius as the brightest star in the sky. Since then it has faded to obscurity and is now, over the last 20 yrs or so as started brightening again.
Surrounding the star itself is an awesome thing called the Humunculus Nebula, great balls of dust that was chuffed off during the last outburst.
This nebula reminds me of those google eyed goldfish.

Like most amateur astronomers I'm hoping with fingers crossed that she will go Supernova while I'm observing her.

My favourite is the cataclysmic variable star SS Cygni. I never know what I'm going to find when I go to this familiar field. Most of the time SS is sitting down around 12th magnitude, but every so often it's up around 8th magnitude. Some night I'm going get lucky and catch it just as it's starting to brighten, and I'll be able to atch it go from 12th to 8th magnitude in a few hours time.

not technically stars but i would like to look at venus, she looks like a very bright star, look up on the internet for when to c her. and the andromeda galaxy (its our nearest one) if you look at the andromeda galaxy you are looking at it as it was when our solar system was being formed
btw, ive neva looked through one, but thats what id look at, and sirius, you cant forget the dog star
