If they accept the penalty, the play does not exist and the stats are not affected by it for the QB or WR.

Stats are not affected, either for the QB or the WR. Since the penalty was accepted, it is like the play otherwise didn't exist. The yards gained by the offense are accounted for by counting as penalty yards against the penalized team.

If the ball is caught despite the interference, it is an attempt and a completion for the quarterbak, a catch for the WR, and the yards are added to both their totals. If the ball is not caught, it is not counted as an attempt.
