I considered using this for my middle school science project but didn't.
Plant lots of white-petaled flowers in an indoor greenhouse-type thing. Give one set regular water, one set water with a few drops of red food coloring, one with green, and one with blue. See if the color of the petals in the colored water plants is still white.
P.S. Be sure not to pour the water on the petals of the flower so you don't stain it; that would affect the outcome.

Good luck!

If you can research on classmates, do some type of comparison study on their performance with a test/experiment. Collect the data and compare results of two groups or between a control/experimental group.
For example, you could test the ability of boys/girls to detect different amounts of sugar dissolved in water. Be sure to clearly state the hypothesis, variables etc. in your proposal. Use a large number of subjects, a control, and construct tables/graphs of the data.
The Stroop Effect Test is another interesting experiment you could do. You can find information about it online. It tests the ability of people to vocalize words and colors.
Both of these are simple examples, check the ideas with your teacher for more suggestions of how they could meet the class requirments.
