There's plenty of information, however just make sure it's credible!
Over the years, I seen a lot of websites with really bad information about the Salem Witch trials and the "burning times"- many claiming that they persecuted Wiccans (which is ridiculous- Wicca was founded by Gardner 60 years ago). So just be careful that the information is accurate.

There is no shortage of info on that. You can write about how they determined whether or not a woman was a witch by dunking them until they drowned. If they didn't drown they were a witch. How's that for insane! You could also write about some famous court trials that involved witches. You also could explain what exactly witches were practicing that made the townspeople persecute them.

I agree with Alexis B. Write about current persecutions. Like the Mom in Georgia whose kids were taken away by the court because she's a Wiccan. Or about the many abuses modern witches have to put up with in the workplace from "well-meaning" Christians. I could go on for hours...

First of all, google the topic if you haven't already done so. wikipedia.com is a pretty good source to go to, but the bad thing is that the info on there is editable, so be careful what you read there. answers.com is another good source to go to.
write about how the salem trials started. talk about the various people involved in it. talk about the end results of the trials. add lots of details.
most importantly, go to your instructor or teacher to and get their opinion on what to write about.
p.s. don't take anthing on the internet at face-value; why don't people nowadays talk about the kinds of persecution christians are going through these days? Especially in muslim countries.
