On defense, every player is an eligible receiver, so they can intercept/pick off/ recover fumble for a TD. On the offensive side of the ball, only the players lined up at the end of the line of scrimmage and the players in the backfield are considered eligible. The QB is only eligible if he takes a long snap from center (shot gun formation). Linemen are only eligible of they report to the referee that they are an eligible receiver for the play and line up accordingly. Ex: William "The Fridge" Perry caught a TD pass back in '85.

Any of the eleven players on the defense can score a defensive touchdown. On the offensive side of the ball, only the two tackles and two guards are ineligible to receive a pass - unless they declare themselves eligible to the referee, prior to the play and for that play only. Anyone on the offense can score a touchdown via a recovered fumble in the end zone.

Any player who has posession of the football during play can score a touchdown.

Yes, the only people who aren't able to score a td are the who are on the front line (besides the tight end and rb and qb).

yes on defense anyone can get an interception and get a touchdown and on offense the quarter could pass to anyone he wants for a touchdown not only his receveirs and the quarterback could run for a touch down

Usually you are supposed to go with the play, but if you just happen to have the ball ( you picked up a fumble, intercepted it etc.) then make a run for it.
