How do I set up the wildcard mask to cover only odd hosts?

...hey, try this

access-list 2 permit 210.100.30.0 0.0.0.254
..its a std ACL for checking source IP at dest.

access-list 200 permit tcp 210.100.30.0 0.0.0.254 160.50.0.0 0.0.255.255
...this is extnd ACL for checking dest IP at source

You don't. You can only use wildcards to specify ranges.
