in general why do men with more education earn more in all fields...

The more educated men (and women) are the ones who are smart enough to avoid low paying jobs.
There is actually an academic paper on this topic by Michael Spence. He won the Nobel Prize for his paper on how individuals can signal quality by taking a costly action. In his paper, people get an education to signal their quality. Employers are therefore more willing to hire them because they know they will work hard.

Are you talking about two guys doing the same job, and the one with more ed earns more? Or are you talking about all workers?
