I don't know if this qualifies as a shoot-out scene, but I like a scene in the movie "The Quick and the Dead" (Sharon Stone, Leonardo De Caprio, Russell Crowe, Gene Hackman). The movie is about this little town that has an annual "fastest gun" competition. In the end Sharon Stone's character goes up against Gene Hackman's character and when she shoots him, you can see daylight.
Give it a watch...

There's a couple of movies with some hell scenes in them - Open Range and Munich. A warning that they go a bit slow before picking up the pace but when the shooting starts you don't know who the hell is shooting who!
These are two that I can think of at the moment.

The two that come to mind immediately are the climax of "The Wild Bunch" and the bank robbery in "Heat." Both classic.
