There is not one definitive album, but if I had to pick one - then it would be Discipline. Each album has it's moments.

Discipline is probably the best single album by King Crimson.
Pay particular attention to Please Wait ("Matte Kudasai") and Heat in the Jungle ("Thela Hun Ginjeet"). The album - start to finish - has a great continuity of sound.

There are several compilations. If you seek a "greatest hits" set, I recommend the Compact King Crimson (1cd) or Frame by Frame (4cd).

Other good songs that come to mind (listed by album)
Court of the Crimson King: "21st Century Schizoid Man" and "Court of the Crimson King"
In the Wake of Poseidon: "Cat Food" and "The Devil's Triangle"
Lizard - listen to the long title track (4 stories in 1 song)
Larks' Tongues in Aspic: "The Talking Drum"
Starless and Bible Black: "The Great Deceiver" and "The Mincer"
Three of a Perfect Pair: "Nuages" , "Industry", and the title track
