Depends on the system you are using.
For the PS1, probably FF7 or FF9.
For the PS2, FF10 is the best starter, FF12 is a bit too complicated for a first game.
For the DS, hmmm. Final Fantasy 1 probably.
For the GBA: Final Fantasy 4 and 6 are the best choices. (Note that GBA does play on the DS!)
Out of all of those, Final Fantasy 4 is a good starting place. It is the one most others vary themselves off of, it has nothing particularly unique or difficult to understand. Final Fantasy 6 is the next simplest, with a large cast of characters and an interesting story line. It is also the least linear in the end area.

4 is a good starter....it is easy to play and the story is simplistic. It also has a simple battle system, but it lacks some of the features of the later games. 6 is also another good on. It is a bit more involved than 4 (story and battle system mostly) 7 is quite a bit different than those 2, but good just the same....you could start with that one. Personally, I would start with 6 or 4...they are my favorites. 9 is also fun.

Listen to djfear, he knows what he's talking about. Try 4, 6, or 7, and I would highly recommend 6. It was my starter and now I've played every FF game but 11.

VII is considered the best (not by me), but try some of the Tactics series for a good starting point.
Or buy a Zelda game, they're much better.
