The Old Testament tells us to rise up before gray hairs.
Do you think that means you should stand and perhaps give up your seat to a senior?
Or does it mean that you should rise up, that is, come into the service of the Lord, while you are yet young and your hair is not gray?
I take it to mean you must rise up in service when you are young.

It means (as you have already guessed) to give honor and respect to your elders. To rise up, not necessarily to give them your seat, because at that time seats of prominence were reserved for the elderly, but rather to show respect to those who having gray hairs, who due to their years alone, are wise.

A side note. I have passed the gray and have gone into white. It is surprising how much I have learned over the years. I ask God each day for wisdom and He has honored my request. I am not trying to brag on myself, for there is still much to learn, but you will experience it one day. I have the ability I did not always have, of being able to tell when a person is lying to me, or being able to see the end result of an unfortunate action. It is almost frightening.

"If" one spends their life worshiping and serving the True God then when they reach old age they should be mature and wise in the Faith. This wisdom is acknowledged by God in that he/she should be respected by the younger. Respect isn't a given, it is earned.
