For nice, seriously crispy fried chicken. Cut up a frying bird. Dry it with a lint-free towel. Soak it in buttermilk for an hour.

While soaking, make some seasoned flour (a mixture of flour, salt, and pepper). Divide the seasoned flour into two large bowls.

Get a third bowl with either egg wash or more buttermilk. This really depends on what you prefer. I prefer the buttermilk.

Dip each piece of chicken in the first bowl, tap off any excess seasoned flour, dip in the egg wash or buttermilk, then dip in the third bowl (seasoned flour).

Fry these in a pan that has enough oil to fry half of each piece at a time. 400oF is good. Fry until golden brown on one side, turn over.

Dry on paper towels to get rid of any excess oil.

1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard

1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.

2. In a large deep cast iron frying pan, melt lard over medium-high heat to 375 degrees. I use the splatter test, put a little water on your fingers and flip it into the grease, when it splatters the heat is right. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paler towels
