I was reading a school text book last year, it says color is in the eye of the beholder, that its not as it seems, but somehow i dont really believe that, but a white horse at midnight would be a greyish color, or whatever your eyes see, it would't be white, it would be white in light but in dark it'd be a different color

If there is light its white. If there is no light the horse isnt even apparant so you wont even know a horse is there much less what color it is.

it's still white. At nightfall, it may look a little blue, but it's still white.
