Its confusing when the majority of Christian preachers say that the law is no longer binding, including the 10 commandments. wouldn't that be "do[ing] away with the law"?
If you start by assuming that every letter of the bible is absolute truth, then the correct interpretation of the Bible must have no contradictions. How then should Matthew 5:17 be interpreted?

Replacing the "old" law with a different "new" law constitutes a "doing away with." Does it not?

You are right , that is confusing. Jesus meant what he said in Matthew 5:17, it is a straight-forward statement. False teachers have been teaching to the contrary.
The law that Jesus fulfilled was the law that was added because of transgressions, as is stated in Galatians 3:19, Why the Law then? It was added because of transgressions,... read it. The law in each instance is referring to a different law.

The 'old law' was fulfilled; and was replaced with a new better law. There is no contradiction. Yes, the 'old law' did include the '10 commandments', but 9 of the 10 are reauthorized in the new law; the 10th (keep the sabbath) expanded.

It is not a matter of "doing away with" that law, but rather a matter of ending that covenant.

Mt. 5:17 is commonly misinterpreted to mean the legalities of the law will not pass but be fulfilled. But you cannot fulfill or destroy (potentially) law in the prophets as there is no law codified in the prophets. Jesus is talking about the prophesies in the law and in the prophets.
