I have a nice little rib-eye ready to be cooked and have kind of gotten out of the urge to cook, which I normally love, by the way (creative fun). So now I am still hungry naturally, but want to 'cheat' and make it a one-skillet dish. I have the rib-eye, onions, yellow squash, fresh tomatoes, red potatoes, fresh green beans, red bell, green bell, minced garlic in the fridge, all kinds of spices - (no mushrooms today).

WHAT ARE YOUR CREATIVE IDEAS??? You don't have to enlist all of the ingredients, they are just available. And you can suggest others, I may have them :-)

Love rib eyes
but I have to grill them....then sauce them
mash potatoes with fleaks of; red and green bell peppers,onions, garlic
steamed green beans with lemon an butter....

one skillet...
stroganoff....you will need pasta....sour cream
saute' veggies (no potatoes)
braise strips of rib eye
toss veggies with meat with pasta, some Burgundy, salt and pepper....and sour cream to sauce it

My first thought also was a stir-fry with the garlic, bell peppers, squash, onions beans and steak. Too bad about no mushrooms.

My second thought would be Beef Moo Goo. My mother has made this recipe for years and it's always a hit:

BEEF MOO GOO

1 T oil
1 clove garlic
rib eye - sliced into 1/8" thick slices
flour
3 T chopped onion
1/2 lb mushrooms (if you had them) - can make it without it but not as good
1 c beef consomme
2 T soy sauce
2 T cornstarch
green beans - steamed until tender-crisp
rice

Saute garlic in the oil 2 minutes and remove the garlic. Season meat with salt and pepper. Dust with the flour and pound the flour into the meat with a wooden mallet. Heat the pan until the oil is very hot. Sear beef quickly on both sides over the high heat. Remove beef. Reduce heat and add the onions to the drippings - you would add your mushrooms here also if you had them - could use 1 can. Saute until tender and slightly brown - about 5 minutes. Add the beef, green beans, beef consomme, soy sauce and the cornstarch (blended until smooth with a little cold water). Cook over low heat stirring constantly until thickened. Serve at once with cooked rice.

does it have to be one pot? i would actually bbq the steak using a rub of maybe garlic, salt, pepper and maybe rosemary. grill it up on the bbq. you could also do on a grill pan if you have one or broil it.

then while that's going, i would cut up the veggies, onions, squash, bell peppers, red potatoes, into smallish chunks, toss with a bit of olive oil, and season with salt, pepper, and poultry season (or mix of dried sage, rosemary and thyme), back at 350 for about 20 - 25 minutes until potatoes are tender.

big fat steak house dinner for one.

Ribeye is my Favorite cut:)
salt & pepper steak
Heat Oil to 325-360 just before it starts to smoke
sear both sides of steak add butter cook to Temp.
while meat is resting
Sautee all available produce
salt & pepper to taste

my suggestion would be to put the rib eye in the middle, shredded potato mixed with shredded onion and flatten that into a rosti yum

cut the meat into strips and do a stir fry with all of the other veggie you have..yumm
