My springform pan has a glass bottom. I have trouble getting the cheesecake to loosen from the bottom. Would I have less trouble if the bottom was metal? I have tried putting parchment baking paper on the bottom or greasing it like the recipes says to but I am still having a problem. Any ideas?

praire crone, i am guessing you want to take the cake out of the pan whole and either put it on plate or on a cardboard to transport. i am a pro baker i don't mess with a spring form pan, don't hold up in heavy production. use a 9 by 3 inch deep pan,which is much easier to work with. i am guessing you are useing gramcracker base, which is hard to deal with to start with. i make a short dough cookie type ,then with a paper between the pan and the cookie parbake for about 12 min.at 350. then i spray the inside of the pan, add cheesecake batter bake. when it comes out of oven let cool to room temp then refrig overnight. next morning take out set on gas stove burner small flame for 15 second, run knife around cake flip on to cake card with a piece cake paper on it then back on plate or cake card round. if don't have gas stove set on warm wet towl for a few min. that should do the same thing warm up the fat in the bottom of your pan and it will release. hoped this help with a few ideas, some time that fancey stuff don't work as good as the old tried and true, that glass bottom to much fufu. good luck.

My springform pan has a metal bottom and getting it loose (to start with) is a little difficult - being able to get my knife between the crust and the metal bottom - because of the lip on the bottom. Once I can get my knife under there, then it's a snap. Maybe the same thing is happening with your glass bottom.

You could try Wilton's Cake Release. Its not terribly expensive, and a little goes along way, and it works way better than the parchment trick. Just a thought.

You could buy a new pan, but before you do that go and grab a bottle of the cake release, and try it. It's around $3 at your local crafts store.

Ms Crone, does it matter? Why not just eat it right out of the pan? LOL, Cheese cake is to be eaten NOT removed from a pan. LOL

After you grease it coat it with sugar and it'll come right out
