I am going food shopping tomorrow, then going on vacation friday... what's something I can buy that's easy to make for the night we come back? It will be Sunday, so whatever I make would have to last in the fridge until then.
I'm just looking for some good ideas for an easy dinner... I'm sure you all understand that I want a simple meal for that night. :)

Make a thick beef stew, when you get back you just need to reheat it- and it always tastes better after a couple days in the fridge!

Cheese Tortellini cooks in like 5 mins. Good with a tomatoes sauce.

Frozen Lasagna...........just pop it in the oven when you get home. There are a lot to choose from and they are pretty good. We like the Wal Mart brand and Stoffers (spelling?).

If you fry up some chicken before you leave, you can always have some cold chicken and potato salad when you return.
