RO - TEL (CON QUESO) DIP

1 to 2 cans Ro-Tel tomatoes with chilies
2 lb. Velveeta cheese

Melt Velveeta over low heat; mix in tomatoes until warm. Enjoy as a dip for tortilla chips. Also if you are on a budget, 2 cans of Cheddar cheese soup can substitute for Velveeta

My absolute favorite, "Progresso Chicken Enchilada" soup. Also add a pound of browned/crumbled ground beef, a can of Rotel tomatoes. Making this tomorrow for a birthday pot luck. It has been the hit of the party many times. In a pinch you can add water if you don't have any milk.

I would try milk (start off using a little- you can keep adding, but you cant take it away)...then add salsa...
