if she has a fear of getting fat she probably has an eating disorder.
maybe you should talk to her parents or confront her.

She might be. That's very little carbs, little if no protein, and caffeine. Contrary to many beliefs, our bodies DO need fats to survive. You cannot make new cells without it. It goes without saying that that's a sure ticket to a quick death.
Not only that, there's a minumum number of calories needed just for our bodies to properly sustain themselves and cucumbers and diet coke have practically none. Bread has 60-100 calories per slice at best. That's just nowhere near enough. I would suggest talking to a counselor about getting her some help if you feel you can't do it yourself or feel that she'll ignore you...

2 slices of cucumber is like 2 calories.
A slice of toast with nothing on it is 60 - 80 calories.
She sounds anorexic!

You should really report this to a school counselor or your parents (someone you trust). It is very unsafe for her to eat so little. She is not getting any protein in her diet.
Soon, her body will start to eat her muscle for energy and she will become very sick and could possibly even die. As a growing youth she definitely needs more calories to grow into a healthy adult.
Please find an adult that you can talk to about this.
Good Luck! I know you care about your friend.

is she anorexic? the odds are very high that she is. having that low of a caloric intake during puberty is going to screw up here endocrine system for life. most likely she will have serious health problems for the lifespan if she continues eating like this.
the foods that you have listed is barely a between meal snack. she undoubtedly has many nutrient deficiencies and is setting herself up for a very unhealthy life with major issues with depression and the health in general. she needs to get professional therapy ASAP.

that is VERY unhealthy.
make her eat.
she could die if she doesn't eat.
talk to her or a trusted adult.
are you sure that's all she eats?
is she very thin?
is it possible that she says that's all she eats because she wants attention? haha I don't know but you need to get her some help, either way.

Sounds like it. She sounds like she has some kind of eating disorder. She isn't getting any kind of nutrition that her body can use either.

If that's true, it sounds like it. That is, by no means, enough nutrition for a person to sustain living.
