I would like something original and not just the typical mayo and relish. Thanks in advance.

I picked up this recipe from attending an English Afternoon Tea class. The chicken sandwiches weren't made the way I always made them. These don't require mayonnaise but they are very good.

I've since added a couple of things to them but they are still very good.

GOLDEN CHICKEN

2 hard-boiled egg yolks
1 tsp butter, melted and cooled
1 tsp lemon juice
1 c minced cooked chicken
1 tsp chicken stock or broth
salt and pepper to taste
small celery stalks with leaves

In a medium-sized bowl, mash egg yolks with a fork. Stir in the butter and lemon juice. Add chicken and stock; season with salt and pepper. Mash to a smooth paste. Make sandwiches with chicken mixture. Garnish with celery.

Now, what I did to the above recipe was add minced celery to the mixture. You could also add some pimiento for a little color. Some diced green onions would also be good in it.

I would also spread some butter on the bread for your sandwich. Chopped nuts would also be good in it. Maybe even some minced grapes or apple.

Muffalious Chicken Salad

INGREDIENTS
2 cups cubed, cooked chicken
2 celery ribs, chopped
1/2 cup chopped green pepper
1/2 cup mayonnaise
1/3 cup slivered almonds, toasted
1/4 cup sweet pickle relish
1/4 cup sliced pimiento-stuffed olives
2 tablespoons chopped onion
2 teaspoons prepared mustard
3/4 teaspoon salt
1/4 teaspoon pepper
12 English muffins, split and toasted
12 lettuce leaves
12 thin slices tomato


DIRECTIONS
In a bowl, combine the first 11 ingredients. Top 12 muffin halves with lettuce leaves; spread with chicken salad. Top with tomato slices and remaining muffin halves.

Greek Salad Pita Sandwiches

Makes 2 servings

This simple salad sandwich becomes dinner with the addition of some grilled boneless, skinless chicken.

Ingredients:

2 tablespoons olive oil
1 garlic clove
1 tablespoon red wine vinegar
3 cups shredded lettuce
2/3 cup tomatoes, diced
2/3 cup red bell peppers, diced
2/3 cup cucumbers, diced
1/3 cup red onion, diced
1 ounce feta cheese, crumbled
1 whole-wheat pita

Directions:

Smash garlic clove, place in small bowl and pour olive oil over it.

Combine lettuce, tomato, pepper, cucumber, onion and cheese in large bowl and toss to combine.

Add vinegar to olive oil and garlic and whisk to emulsify. Discard garlic clove. Toss with salad to dress.

Stuff into half a whole-wheat pita pocket to serve.

I've always experimented with left over Chicken and Turkey. When I have made chicken Salad I have added celery, onions and apples along with onions and Mayo and it tastes great.

CHICKEN CAESAR PASTA SALAD

3-4 chopped boneless chicken breasts
Caesar or Italian Caesar salad dressing
2 cups broccoli florets
handful of cherry tomatoes (optional)
pimientos (optional)
4 cups Rotel pasta noodles
1 tsp. olive or vegetable oil

Cook chicken breasts until they are tender and chop into bite size pieces.
Cook Rotel noodles in boiling water for 7 minutes or until tender in water with oil.

Steam broccoli florets (over stove or in microwave) until slightly tender (do not overcook!).

Cut tomatoes in halves and wash thoroughly.

Mix noodles, chicken breasts, broccoli and optional ingredients (pimentos and tomatoes). Drizzle salad dressing until pasta is slightly covered and stir salad until covered in dressing.

Serve either chilled or warm, accompanied by a bottle with extra dressing at table.

Leftovers will keep in refrigerator for up to 4 days or can be frozen for a month or two.

CHICKEN HAWAIIAN SALAD

16 oz. can chunk pineapple (drained)
1 1/2 c. cubed cooked chicken
1 c. chopped celery
1 c. halved green grapes
1/2 c. chopped walnuts
Salt to taste
1/4 c. thawed OJ concentrate

Combine all ingredients and toss. Chill before serving.

HOT CHICKEN SALAD

4 c. cooked cut up chicken
1 can cream of mushroom soup
1 chopped onion
2 c. chopped celery
1 c. salad dressing
1 c. grated cheese
1/2 c. slivered almonds
2 c. crushed potato chips

Combine chicken with soup, onions, celery and salad dressing. Put in large casserole and top with cheese, almonds and potato chips. Bake 30 minutes at 350.

start with your chicken and mayo salt pepper and diced onion #1 add curry powder,shredded carrot and golden raisins or #2 adding 1tsp. tarragon ,1/2 cup dried cherries or cranberries and 1/4 cup toasted walnuts or pecans both are delicious and different enjoy!

Here is one with an Asian flair that my family really likes it works with tuna too: Cooked chicken shredded, sesame oil (chili infused if you like spicy), shredded cabbage, shredded carrots, scallions salt, pepper and sesame seeds serve on wheat bread.
