If he wants to sue the bar and/or the bouncer, I doubt that he will be a very sympathetic plaintiff to a jury.
Your friend could always file a written police report against the bouncer even though the police on the scene apparently did not think that his actions warranted any action on their part.
If you really think that you have a case you should contact an attorney.
Based on what you have said here I would be very surprised if any attorney could identify any legal action that you can take under the circumstances as you have presented them.

You would have to press charges for the assault, but if the officer at the scene wouldn't take you seriously, it's going to be hard to prove. Did you take pictures of your friends face? I have been a bouncer and never punched anyone. I don't think that a bouncer should punch people unless it is self defense. I would go the police dept. and press charges.

You can file charges. You can sue him. However the court is going to believe a sober bouncer over drunk people that throw drinks and swear at bouncers.

Get over it. Check it as a lesson learned. I wouldn't go seeking revenge. After all the cops took your names and you guys probably used a credit card so it wouldn't be hard to figure out who you were. Remember bouncers are big dudes, and usually have big friends.
A good way not to get punched in the face is to not hang out with guys who throw drinks in faces. Also, stay out of bars.
