Usually by smell and often by sound more than by sight alone, but yes, they will remember. I've had it happen with my own cats remembering people they used to see regularly, but then hadn't seen in a year or more, plus I've experienced it when I visit friends whom I haven't seen in a long time The cats remember me and settle into their old familiar ways with me.

I have heard that cats will remember anyone they have met in the past, cats are very smart

yes my older sister has a cat and she was gone for a year and the cat still remember her and still loves her more than us..

It depends on how well they knew the person. Former owner, probably. Casual acquaintance, probably not.
