Cut the chunks up into smaller pieces (its easier to do when they are still partially frozen). Get a big skillet and put the pieces in it with some oil (I prefer olive) and a whole chopped up onion, some seasonings, like Italian and garlic and Cajun, and some Sofrito if you can find it (Goya, in the freezer section), balsamic vinegar and a small can of tomato sauce. Once its done and the meat is tender, and saucey, serve it over yellow rice or garlic mashed potatoes, with a side of pink beans and some corn, a salad and some crusty rolls with butter, and a glass of red wine to wash it down. Pumpkin pie for dessert with coffee or tea or warm mulled cider.
Sorry - pregnant? Skip the wine and have iced tea or maybe some fruit punch.

Shredded beef for enchilada fillings or to use in mexican casserole. Brown your meat in 1/4 C water, then add a mix of 3 C water, 1 beef bouillon cube, 1/4 C vinegar, 1 tsp cumin, 1 tbsp chili powder. Bring this to a boil and cook until beef is tender or pressure cook for 40 mins. Shred by pulling apart with 2 forks.

Beef Tips and Rice
Coat the meat with seasoned flour (as you do for stew) and brown.
Place all of the meat in a pot, add bell peppers and onions, add more seasoning and add some water to the pot and let it come to a boil.
Then turn down and simmer for a few hours, like 3-4, if it's not thick enough gravy for you make a paste of flour and water and add til it's as thick as you like, be sure you let the flour cook off before serving.
Make a pot of rice, and place the meat/gravy over the top of it and serve with a vegetable of your choice.

I like to use stew meat for a beef teriaki(not sure if that's spelled right.) I cut the cubes into strips and cook it in a pan with teriaki sauce. Then I cook some rice to go with it. It's pretty yummy. Sometimes I'll add regular green peppers to the mix. Good luck with whatever you make.

BEEF KABOBS
2 lbs. top round, cut in 1-inch cubes
1 onion, cut in 1-inch squares
2 or 3 green peppers, cut in 1-inch squares
1 lb. cherry tomatoes
1 bottle Wishbone Italian salad dressing
Thread onions, peppers, cherry tomatoes, and beef alternately on skewers until you have 4 or 5 pieces of each on a skewer. Place in an oblong cake pan and cover with the salad dressing. Let the kabobs marinate overnight. Drain. Cook on a barbecue grill 5-10 minutes, turning occasionally so that they don't burn. Makes 8 or 9 servings.
BEEF, ZUCCHINI & TOMATO KABOB
1/4 c. nonfat yogurt
2 tbsp. lemon juice
2 cloves garlic, minced
2 tsp. minced fresh ginger or 1/4 tsp. ground ginger
2 tsp. paprika
1/2 tsp. each cayenne pepper, ground cardamom, cumin & coriander
3/4 lb. boneless lean sirloin steak, cut into 12 cubes of equal size
1 med. size zucchini (about 1/2 lb.), sliced into 12 rounds - about 1/2 to 1 inch thick
8 cherry tomatoes
2 med. size yellow onions, quartered
In an electric blender or food processor whirl the yogurt, lemon juice, garlic, ginger, paprika, cayenne pepper, cardamom, cumin and coriander for 10 to 15 seconds.
Place the steak cubes in a bowl. Pour in the yogurt mixture and toss well. Cover and marinate at room temperature for 3 hours or refrigerate overnight, turning once.
Heat the broiler.
In a medium size saucepan cook the zucchini in unsalted boiling water for 1 minute, drain.
Remove the beef from the marinade and thread it onto 4 long metal skewers, along with the zucchini rounds (pierce through skin to skin), cherry tomatoes and onion quarters. Lay on the broiler pan rack and broil 5 inches from the heat for 15 to 20 minutes turning often.
When the kabobs are done transfer them to a warm platter and serve right away.

My gram always made Tomato Beef Soup with stew meat
coat meat with flour and brown in oil, add 2 &1/2 to 3 qts. beef broth or water and beef cubes, add 1-16 oz. can tomatoes [break up tomatoes] and juice, 2 stalks diced celery, 1 small diced onion, 2 diced up carrots, 1 tbsp. parsley, salt & pepper, sprinkle of garlic powder, bring to boil and lower heat and simmer 2 hrs. then add 1 lb. cooked macaroni.

You could make a chinese dish with it. Pan fried veggies and rice mixed with the cooked meat....add soy sauce, garlic powder, red pepper and ginger to flavor. I make this same mixture with chicken or beef....but with chicken, I add a can of pineapple, with the juice.Comes out great...don't overdo the red pepper powder, or it will be too spicy.

Beef Curry. Definitely. If you can, let it marinate half way thru cooking (The technique might be called "Bunjab"?). I've no idea how to make it tho. My wife is the curry making expert. I'm the curry eating expert. :-)
