I need to make stuffing tonight from scartch, but the bread isn't getting stale quick enough. I tried to make stuffing using toasted bread but it came out rubbery, so toasting isn't an option.

Don't worry, make it using the fresh. Just cube it as the recipe indicates. You will be adding a liquid anyway so just cut back a little on the liquid until it has the moistness you desire. As an example, if a recipe called for day old bread and 1 cup of stock, you might use fresh bread and 2/3 cup stock. (if your worried about the flavor of the stock, just use the full amount and reduce it so that it is stronger.
Day old bread is more important in dishes like french toast than for stuffing.

Haha. I hope I'm laughing with you, and not at you. You can't "make" bread become stale faster than it wants to.

Try going to a bakery or grocery store bakery section and buy the oldest bread they have. Do you know of a store near you that has a markdown rack? Our Wal-Mart does. That's your best bet, if toasting the bread hasn't worked for you. Good luck~

*Or maybe call around to friends and family and see if anyone has some stale bread?

Set your oven on the lowest setting above warm, put the bread right on the racks, and you'll have stale bread in no time!

Turn on the oven to about 200 to 225 degrees. Lay your bread slices on a cookie sheet, and place in oven until dryed to the point you want to make you cubes, and dressing.

I made stuffing on Saturday with toasted bread, and it came out fine... Try putting it in the oven on the lowest setting....maybe even crack the oven a bit so it doesn't get too hot in there...hopefully that will dry it out faster...

Take it out of its wrapper. room temperature will make it stale very quickly.

put it in the oven for a little while at a really low temp... it should dry it out

put in in a plastic bag, zip it very tightly it will turn a greenish color, then you can do what you want with it!
