Chocolate Velvet Cheesecake
(10 servings)
1 c Vanilla Wafer Crumbs
1/2 c Chopped Pecans
3 tb Granulated Sugar
1/4 c Margarine, Melted
16 oz Cream Cheese, Softened
1/2 c Brown Sugar, Packed
2 Large Eggs
6 oz Semi-sweet Chips, Melted
3 tb Almond Flavored Liqueur
2 c Sour Cream
2 tb Granulated Sugar
Combine crumbs, pecans, granulated sugar and margarine; press onto bottom of 9-inch springform pan. Bake at 325 degrees F., 10 minutes. Combine cream sheese and brown sugar, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in chocolate and liqueur; pour over crust. Bake at 325 degrees F., 35 minutes. Increase oven temperature to 425 degrees F. Combine sour cream and granulated sugar; carefully spread over cheesecake. Bake at 425 degrees F. 10 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill.
VARIATION:
Substitute 2 Tablespoons milk and 1/4 teasponn almond extract for almond flavored liqueur.

i bake for a restaurant and this is my recipe (NOTE: this is for 2 cakes)
for the crust
-box of graham cracker crumbs (i used keebler)
- 1 stick of butter
-1/2 cup sugar
melt the butter completely and add to the sugar/graham mix. mix well then pat down into spring form pans. put in freezer for 15 min.
for the cake
-6 eggs
-2 cups sugar
-4 tsp vanilla extract
-6 cream cheese packets (8 oz each), softened
-2 sour cream tubs (16 oz each)
- 2 pinches of salt
mix eggs and sugar. add cream cheese and sour cream gradually until mixture is uniform (it may be a little bumpy if the cheese is harder, that's OK). add vanilla and salt.
bake at 350 degrees for 50 minutes. Take out, let stand for about 20 min.
Topping (this is a special touch)
- 2 sour creams (16 oz each)
-1/2 cup sugar
-4 tsp vanilla extract
Mix well, and chill in refrig while cakes are baking.
After you take the cakes out after the inital baking, spread topping on and put cakes in the oven for 5 more minutes.
Let cool, put tin foil on to cover, and place in refrig to chill (or freezer if you need them ready in a shorter amount of time)
this is a big hit at a very popular restaurant! it's simple and delish!

lol, no. but i came across a great deal on some gourmet cheesecake this weekend :)
it's at costco, 12 slices, 4 different tasty flavors, and it's from the cheesecake factory :) oh yeah, and it's only $14.99!
cheaper and easier then anyone could make it :)
