I thought that meats, when well-smoked, and sealed in plastic, were virtually non-perishable. Maybe I'm incorrect. If it is possible, where could I find a turkey prepped like this? I'm thinking they would make great donations for holiday food drives.

You can extend the shelf life of a turkey by smoking it but if your goal is a charitable donation there are better options.

1) My supermarket gives "free turkeys" for $$$ spent over a holiday period. They give you a turkey coupon whenever you reach the dollar level for a turkey. Last holiday season, I received 3 coupons. My supermarket accepts donations of the coupons and distributes them so that they can be used appropriately (without the need for storing turkeys).
My family will typically not eat 3 turkeys between Thanksgiving and Christmas, and it seems logical to me to try to make a donation of these products.

2) If you are not talking about "free" turkeys, then I would recommend donating cash to the charity of choice so that they can buy food as needed. A charity will make better use of $15 than a turkey that you are buying for $15.

I hope more people start thinking like you and open their wallets and purses this holiday season. It frustrates me when my kid is asking for an IPOD for Christmas when there are some families out there that would be happy with a PBJ sandwich. Puts things into prospective.

Smoking is an effective means of preserving a meat, but it in no way galvanaizes it for ever!

Canned turkey would be about as close as you could get to non-perishable.

Smoking meat as u speak of, is a flavoring/cooking process. It is really no more of a preservative than ordinary cooking, unfortunately.
The other part of what I believe you are thinking of, is smoking until the meat reaches a jerky state. This is the way American Indians preserved their meat, fish ...
It is when you soak the meat in brine or a similar substance and then slowly dry the meat, removing most of the moisture.
While I love jerky from most lean meats, fish and fowl, I don't think it would meet your needs.

Smoked turkey will last longer than baked, however, any animal meat is perishable in time.

Turkey jerky will last forever. Otherwise no.
