What words would I use to compare the two? For example: Texture, sweetness, etc.?

mouthfeel (mealy, stringy, like P/A should be, etc.)
smell (fresh, metallic, etc.)
appearance (pale, colorful, watery, firm, etc.)

I'd compare taste, texture, and eye appeal. Also price, if that's an issue.
