it cooks them... a little like boiling them but without water... I actually prefer to nuke my veggies for a few seconds instead of boiling to retain flavor and texture

Microwaving vegetables is in fact the healthiest way of cooking them. When you steam or boil veg, the nutrients fuse into the water, and then you throw the water away, therefore chucking away the nutrients as well. Because, with a microwave, you need vary little water, more of the vitamins are retained inside the veg itself.

um... cooks them.

Actually how microwaves work is by exciting water molecules in food (of which veggies have plenty). The water molecules get exicted, start moving and dancing around, and create heat.

I think it boils the inter-cellular water and cooks them that way, hence not need much to put them in (I guess the little used stops the outside becoming dry).
Think about a dried pea and it makes you think how much water they contain...
