I have lots of boneless chops but no roast so I want to try to use them

Yup. You just may need to cook it for a lesser period of time.

I would find a different idea for the boneless porkchops that you have. If you use them for your pulled pork it won't be as good as a pork butt roast. The pork but will "pull" better than your bonelss chops and the pork butt will be alot juicier.

Technically, you can, but I wouldn't.

A pork chop is much leaner that the butt used in barbecued pulled pork. Long cooking periods for lean chops results in dry chops due to not enough fat being rendered for a moist result.

Sure! They won't take near as long to cook, though.
