Go for a jar of Cheese Whiz! Sounds corny, but they come in many different flavors (sharp cheddar, parmesean, salsa). Just take off the lid, warm up in the microwave or pour into a pot to warm and pour over the veges. You could also add a little white wine or kirsch for flavor. What could be easier!

Use the cheese sauce from this mac & cheese recipe for your veggies (first paragraph). it is SO good!
Baked Macaroni & Cheese
½ cup heavy cream
½ cup milk
3 Tbsp butter
2 Tbsp flour
1 lb. macaroni, boiled al dente, according to pkg. directions
1½ c ups yellow cheddar cheese
1½ cups Muenster cheese
Heat the milk and cream together in microwave. Melt butter in large saucepan, then add all the flour stirring constantly. Let cook for 4-5 minutes, continuing to stir. Remove from heat and add warm milk and cream while whisking -- if sauce is too thick, add a touch more milk. Add cheese to white sauce and stir. (Save a bit of cheese for the topping.)
Stir sauce into macaroni and place in a buttered casserole dish. Place in 350° oven until slightly brown and bubbly on top -- 25-30 minutes.

Broccoli in Cheese Sauce
Any kind of cheese can be used, I like cheddar *
* broccoli (you can use fresh or frozen)
* 2 tablespoons margarine
* 2 tablespoons flour
* 1/2 teaspoon salt
* Good dash pepper
* 1 cup milk
* 3/4 to 1 cup shredded cheese
First you have to cook your broccoli. I do this in the microwave, in a bowl, until it is hot throughout. Sometimes, I put a spoonful of water in with the broccoli when I think of it. Follow the directions on the package of the frozen broccoli if you need to. While the broccoli is cooking, melt the margarine in a 2-quart saucepan. Stir in the flour, salt and pepper. Let it bubble a little bit to sort of toast the flour. Whisk in the milk. Cook and stir the sauce over medium heat until it boils. Allow it to boil for a whole minute. Add the cheese and stir until it melts. Serve over the cooked broccoli.

5 tablespoons butter
1 teaspoon dry mustard
5 tablespoons all-purpose flour
4 cups whole milk
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon black pepper
Few drops Tabasco hot pepper sauce
3 1/2 cups grated sharp cheddar cheese
1/2 cup dry white wine
1. In a medium-size saucepan, melt butter; remove from heat.
2. Add dry mustard and flour and whisk to blend until smooth. Add salt, ground nutmeg, black pepper and Tabasco sauce, mix to blend. Add 1 cup of milk and mix to blend; return to heat. Slowly add the remaining milk, stirring constantly so that the flour mixture does not settle and start to go lumpy.
3. Just before the milk starts to boil, add grated cheese in small amounts, stirring constantly. Reduce heat and continue cooking for about 3 minutes longer until mixture comes to just boil and is well blended. Stir in wine and cook for 1 minute longer.

I make a white sauce then add the cheese. Stir until melted and pour over veggies.

You get mushy ole veggies like spinach. Get some mozerella, parmesan and cheddar. To make it a gooey little thingy... so u can munch it all up.
If u dont want the chewy stickyness, just omit the mozerella
